Recipe: Easy Trail Mix Cookies

Kia Ora dearest friend.

In the last couple of days we put some effort into the food question. A nutritionally well balanced, high-carb food is quite important. It is possible to buy a lot of processed granola bars and meals, but the high-quality stuff is often fairly expensive.

Today we baked oatmeal cookies with almonds and raisins, a great snack for our hike. They are easily done in 15 mins, and you will pay a lot less compared to buying high quality granola bars. Furthermore, you can add a great variety of extras such as different dried fruits, chocolate chips or cinnamon. Just add what ever you prefer. They taste phenomenal and provide you important carbs. Since they are not wrapped in foil, you save a lot of rubbish as well. We really hope to have an oven in our first hostel in Wellington to do some marathon baking, in order to send them all over the country via our bounce boxes.

You don't know what Bounce boxes are? Bounce boxes are resupply boxes, that are sent ahead off you on the trail. They'll be sent to smaller villages, where a full resupply is either very expensive or not possible. They contain food supply (nuts, granola bars or cookies 😛, soap, maps for the next section, gear replacement etc.).

And here's finally the recipe:

Trail Mix Cookies


Servings:
12 Cookies • Prep: 15 mins • Bake: 15 mins

Calories: 425 • Fat: 22.1 g • Protein: 8 g • Carb: 44.9 g per 100 g

Ingredients:

• 125 g oats

• 100 g butter
• 70g flour (you can use whole wheat flour as well)
• 70 g sugar
• 1 egg
• 1 teaspoon vanilla sugar
• 1/2 teaspoon baking soda
• 50g dried fruits (or chocolate chips, nuts...)
• some salt

Directions:

First, mix soft butter with sugar and vanilla sugar, then add the egg, mix
gain. Add everything else, stir and place little humps on a baking tray by using a spoon. Bake them for 15 minutes at 180°C and let them cool down. The recipe is really easy and you can edit it as you like. It always works. Next time, I'll try to add some peanut butter to enrich them even a little bit more 😁.
